Salmon, Nose to Tail


Saturday 28th September, 6pm - 9pm, £45

We are honoured to have chef, consultant and cookbook author, Silla Bjerrum, original founder of Feng Sushi and now working in innovation in the sushi industry, at The Merchant’s Table, where she will perform a demonstration of nose to tail eating with a sustainable salmon. Silla will take a whole salmon and with great skill dissect and prepare sashimi and sushi for us.

The sashimi and sushi will be paired with either a wine or sake.

The focus is on the key ingredients and techniques used in Japanese cooking and de-mystifies the making of several types of sushi and sashimi.

Silla will prepare the whole salmon from raw, demonstrating preparation, sharing skills, discussing food history, tradition and artisan attitudes to food.
