We are honoured to have chef, consultant and cookbook author, Silla Bjerrum, original founder of Feng Sushi and now working in innovation in the sushi industry, at The Merchant’s Table, where she will perform a demonstration of nose to tail eating with a sustainable salmon. Silla will take a whole salmon and with great skill dissect and prepare sashimi and sushi for us.

The sashimi and sushi will be paired with either a wine or sake.

The focus is on the key ingredients and techniques used in Japanese cooking and de-mystifies the making of several types of sushi and sashimi.

Silla will prepare the whole salmon from raw, demonstrating preparation, sharing skills, discussing food history, tradition and artisan attitudes to food.

“I have been passionate about fish for as long as I can remember and my healthy addiction to Omega rich fish is only partially preordained by my Danish genes”.

It is with great pleasure we are welcoming Building Feasts to The Merchant’s Table for a seasonal demonstration and feast in November.

Hanna Geller Goldsmith and Jeremy Coleman, friends with a mutual love of food, photography, design, art and basically anything of creative beauty, together run Building Feasts.  They teach classes, run supper clubs and write about and photograph the food they make, encouraging others to cook and create their own colourful gatherings.  https://www.buildingfeasts.com/

For the evening at TMT, Hanna and Jeremy are planning to demo and share a Seasonal Local Feast. Cooking a wealth of local produce available at this time of year, they will show us how to seasonal dishes and a selection of the infamous Building Feasts’ Fridge Basics - marinated feta, a vinaigrette and a pickle (all used in the recipes).

Details of the demonstration and feast will be released nearer to the event.

The demo will run for an hour and then everyone will sit down together to eat the meal.

The evening will start with cocktails and nibbles from 7pm before sitting down to the demo, followed by a three course meal of sharing plates and conversation, Building Feasts style. Places are strictly limited.

Cooking the bounty of beautiful local produce available at this time of year, they will show us how to make a smoked mackerel salad, their favourite asparagus, smoked quinoa with tomatoes and spinach, taramasalata and a selection of the infamous Building Feasts’ Fridge Basics - marinated feta, a vinaigrette and a pickle (all used in the recipes).

Local produce from: High House Fruit Farm; Hodmedods; Maple Farm; Pinneys of Orford; Pump Street

La Fromagerie of London have created a fresh Spring Supper set menu to celebrate the approach of Spring. Excellent wine pairings for each course are included and supplied by Smashing Wines.

The evening will commence with a glass of Champagne Camille Savès, Premier Cru, Cuvée Tradition.

(75% Pinot Noir 25% Chardonnay), served with Sables & Local Salmon Blinis

We plan to sit down at 7.30pm, with an introduction to the wines as you are served;

Wreaths have been decorating homes for centuries as symbols of the changing seasons. Making a wreath is a joyful, fulfilling process and a great way to spend a cosy Sunday afternoon! We will have the open fire burning as you are taught how to make your own winter wreath.

Claire Thorogood is a couture fashion designer who for the last 25 years has also styled flowers for interiors, weddings, parties, and special events.

With the help of Claire’s guiding hand you are guaranteed to leave on the afternoon with an individually styled wreath, perfect for hanging on your door or to enhance your home, plus the knowledge to make others.

All equipment and materials are provided by Claire and you will learn how to make a seasonal wreath from natural and locally foraged materials, including willow, moss, lichen, seasonal flowers and berries.

The workshop is priced at £75, to include all materials and refreshments. We will be serving tea and cake, with an Autumn Bellini at the end to celebrate your creation.

Back in October at The Merchant’s Table we held an exclusive Vermouth Workshop hosted by The London Vermouth Company, as part of the Aldeburgh Food & Drink Festival.

During the workshop, we learnt all about Vermouth including; how to best utilise your homegrown or hedgerow found botanicals. The London Vermouth Company provided us with dozens of flavours and botanicals to try on the night and a range of Suffolk wines as bases for the Vermouth including:


ANTICO FORMULA CARPANO The original Vermouth, invented in Turin in 1786 but only becoming fashionable by the mid 1800’s when the chic folk created aperitivo culture... a great excuse for a post work drink!

Profile: raisins, Chocolate, coffee and spice.

DOLIN BLANC Although it was Mr Noilly (Pratt) who first took Italian vermouth across the Alps and made it with French grapes and botanicals it was, for us, Dolin, who first made it great :

Profile: mountain florals, then elderberry, almonds and finally peach.

VYA SWEET The forerunners of modern Vermouth. After visiting Mont Blanc and falling in love with Vermouth, the VYA team went home and created an all American stunner. No wormwood either (it’s banned in the USA) so uses gentain instead, giving an earthy dusty base.

Profile: using muscat wines as a base then honeyed sweetness, dried figs and sarsaparilla.

REGAL ROGUE ROSE New wave Australian Vermouth made with outback botanicals and Barrosa Valley grapes. Wine forward.

Profile: Like a glass of wine with a floral silk shirt over the top.

SACRED AMBER Iain Hart is the man that woke the UK up to Vermouth, a hero and a legend.

Made in his front room in Highgate, in collaboration with Dukes Hotel (those Martini masters!)

Profile: orange blossom, orchard syrup and gentle spice.

SERPENTINE STAR CAMILLE’S RED Next generation Vermouth made in collaboration with cocktail doyenne Camille Hobby-Limon. A hearty autumnal treat.

Profile: rhubarb, honey, port and cinder toffee.

SERPENTINE STAR AMBER LIMON Second release via the mind of Camille, this time a perfect sipper!

Pour over ice with a slice of orange and enjoy.

Profile: fresh citrus peel, grapefruit tones and sweet aromatics.


We encouraged participants to think about what Suffolk reminds them of when creating their own botanicals at home. Salty Beaches on a summers day? Musty Forests in winter ? Romance? Hedgerows? Lavender? Candy floss?

Join us at The Merchant’s Table for an intimate evening of modern cocktails, Londecentric cured meats and Suffolk snacks. A relaxed and informal soirée, we will be learning how to make simply executed, delicious cocktails that follow our London & Suffolk theme. Ben Leask of Ben’s House will be serving a London focused cocktail, created from London micro-distillery spirits and ingredients. Followed by a Suffolk focused cocktail, sourcing local spirits and ingredients. Each cocktail will also be paired with London charcuterie and Suffolk cheese plates.

WORKSHOP COFFEE AT THE MERCHANT'S TABLE

WEDNESDAY 16th MAY - SUNDAY 20th MAY

The Merchant’s Table is hosting London’s roaster, Workshop Coffee, at an event which brings together a London producer and a Suffolk maker.

Workshop will be brewing up a couple of really exciting, limited release coffees which are only served and sold in their London cafes. The espresso will be La Magdalena and they will be brewing cups of Finca Belgravia and Tabi for filter drinkers.

Suffolk potter, Steven Will James has thrown a series of porcelain ceramics, specifically to hold the coffees being served, fired using a selection of foraged ash glazes.

“My starting point was that Workshop Coffee is serious about traceability and the origins of it’s coffee beans. When designing a set of cups to be used with those coffees I wanted to include as much about sense of place in the pottery as is in the beans.”

Customers will be able to purchase Workshop coffee and Steven Will ceramics, alongside exceptional brownies and chocolate bars from Pump Street and delicious, freshly baked cakes from The Cook Shed.
